The tarrasque. It is one of those enemies I tend to despise because it has that air of "unbeatable enemy" about it. I can't stand unbeatable enemies because I feel they offer nothing to stories except to roadblock progress.

It just alternates sleeping and eating everything it can find around till that epic ranger or druid wanders by and tames it.

I like unbeatable enemies, because they arent unbeatable. You just cant hit em with a stick until they fall down dead.

Some are helpful approaches and can lead to vast treasures and rewards, others are discouraging for both player and DM.

Sure, everything has its back-door, but there are just some titanic obstacles that you don't have the time and energy for dealing with. The tarrasque, for example, has godly resistances to the point that the only possible way to defeat it is to send it back in time or something silly like that. It's those kinds of enemies that make me cringe, because unless there is an incredibly good reason for it, they still feel like a roadblock.
Now, I do like enemies who are EXTREMELY POWERFUL (with one itty bitty tiny weakness that you have to search for). Those are fun enemies. They remind me of the Shadow of the Colossus, where you had to work your tail off just to kill the only 16 enemies in the game, but you felt like a BAMF after you did it.

drow where drow are not supposed to be is always a way to need a keyboard clean for when you spit your drink out yelling oh shite
my one fave that we have done here is the obvious monster that everyone runs to thinking its a slash and loot and when it laughs at you and smacks the living daylights out of you , you run home to mama crying about the mean goblin/orc/hobgolbin/bugbear on steroids that whooped your behind

actually there is no taming one, it simply had to be slowed until it entered another sleep cycle, the good thing was its feeding cycle was a few days and its sleep cycle was a few centuries. of course over the few days it would consume entire kingdoms of people and foliage.

Yes, it has a Spell Resistance of 32, and a 20 Will save, but there is always that chance it fails it's save vs Dominate Monster (Will save DC 10+9+(Int Mod)). So yeah, it's Int is 1 too high to train, but you could have one on a leash.. not likely I'll give you, but man it would be one hell of a toy.
