I just realized, I posted feedback to Closed Bugs rather than here. So this is duplicated, sorry!
The undead horses in this quest have their CR vastly wrong.
They're +7 AB and close to 50 HP, and spawn in groups of 3. When you kill them, they yield 8 XP on a level 5 character.
Compare to the skeleton hunter on this quest. +5 HP, around 20ish HP. They yield 36 xp.
My guess, based on experience, is that someone added a LOT of HP to these to make them tough to kill. But NWN doesn't recognize extra HP in the challenge rating. So you may have the CR artificially set too low or need to raise it higher.
That said, the undead skunk made my day.
Also Tyrant Fog zombies spawn on this quest, I'm pretty sure you need Magic Weapon to kill them (they have DR 10 if I remember right). That makes them fairly unkillable for most non-caster classes.

They have more than DR 10. Had a tyrantfog absorb a 17 damage hit before I had to spend a chunk of one of my few healing wands on it.

Cuts right through that DR.
