At least one quest on the server -the one with the sunken ship- involves the players going somewhere on a ship, over the sea. I'm pretty confident there are other Immersea quests that involves crossing certain distances over the wine-dark sea.
So yes, you can.

Would a paladin necessarily fall for giving a prayer to Umberlee?
Umberlee is undeniably a part of the world, if Umberlee is not a special enemy of the gods patron, then why not offer the "traditional" tithe, prayer or ritual what have you before setting to sea?
Bowing your head and saying some vague prayer to the godess before setting to sea does not seem all that evil. She is not being honored as an evil goddess, but a goddess of a natural force, would a paladin really fall for that?
What does Mystra care if one of her paladins asks Umberlee to spare him on a long and perilous sea journey?
YES to bend knee, even like that to a deity of evil is a violation of what a paladin stands for.

if. and its is a very big if, if there is a situation for which there is only one relevant deity to pray to and that deity is evil, then, then, and ONLY then would a paladin likely get away with it.
he would fall, but atoning would perhaps be simpler.
In the case of sailing, No. There is a relevant deity who is not only not evil, but is actually GOOD. You pray to him.

Do people need to pray before doing everything? Its not like people in any polytheistic world/society will offer prayers to a god of said portfolio every time they do something.
People don't praise Lathander every morning at sunrise, why would they?
People don't praise Auril each time they see snow, why would they?
People don't praise Malar every time they hunt for food or sport, why would they?
People don't praise Shandakul before going for a walk.
People don't praise Cyric each time they lie.
People don't praise Talos each time its bad weather.Why the hell shouldn't anyone (even a paladin) just get on a boat and sail to wherever with no prayers to anyone beforehand? Its not like Umberlee bothers to sink every single ship that sets out on the seas. Not even the evil gods are that big griefers. And even if said person praised Valkur before going out to sea it would not stop, but rather encourage Umberlee to smite his ass with lightning and walls of water for not only failing to praise her, but praising her enemy instead.

Actually they do. A commoner will like pray to lathander at dawn when he wakes up, malar or another god of the hunt as he eats the meat he hunted last summer (Chauntea if he is a farmer or lives in a farming community), to auril for a mild winter as he walks to the mine, giving thanks to shandakul for a safe passage, and if a storm picks up then he will offer a prayer to talos to ward away his wrath. Before he goes to bed at night he will pray to his patron, so that if he dies in his sleep his soul will be recieved by the god/dess The gods are very real in the FR, and they can bitch slap you hard if you disrespect them.

I tried that once, got really tedious, really fast.

If you had read my post clearly you would see that I said "every time".
Sure, many do from time to time, no doubt, some more often than others. However, in no FR literature I've read have anyone made any notable mention of saying praise to any god besides their own.
Sure, weak-willed commoners might pray east and west for comfort or safety. But we're not playing commoners are we?Besides; as Ultramagnus said: it would be extremely boring to do so consistently.

People don't praise Shandakul before going for a walk. Probably not no, but before every long trip, or trip through dangerous lands, certainly.
People don't praise Cyric each time they lie. No probably not, although they might well do before they launch into a major deception

It may again only be a quick murmured sentence, but they will, they do not want the weather to become a terrible storm or hurricane.Why the hell shouldn't anyone (even a paladin) just get on a boat and sail to wherever with no prayers to anyone beforehand? Sea Farers are notoriously superstitious, after all, if something goes wrong you can't just jump off the ship and walk home. On the Sea you are almost entirely at her mercy, and she is a complete bitch, yes she may drag your ship down anyway, but if a little prayer might stop her you'll do it.

Allow me to put it like this.
Every time you would say "Goddammit", "God, that's beautiful", "godawful", ""bless you", "thank heavens", "jeezes, man!" or anything similarly derived from calls to the divine, a person from the Realms would do the same, but substitute 'God' or 'Jesus' for the appropriate deity. And they'd actually mean it because the deities are objectively there, empirically measurable, and directly responsible for whatever you're talking about. -
