So what's a level 1 to do?

Actually lvl 1 is the best for exploring/DM events - no lvls to loose, am I rite fellas?
i never thought of it that way, but you will see a lot of different screens loading though

My advice: plot.
My first CoA character, at level 1, was hunting gossip about an evil organization he overheard some stuff about, it got him to meet a powerful arcanist, he got a few scrolls as a reward, more plot info, and a hefty amount of DM xp.
My second one, a drow-hating gnome, rallied the adventurers against drow and organized a hunting party (he hid behind the others, being a level 1, and managed to survive - not that they found any drow, mind, otherwise he likely wouldn't have) :D
My third one was selling junk items in the marketplace, he was happy if he made a 10gp profit per day at level 1 - but he invested the coin in a spare Mage Guild pass and eventually gained tens of thousands gp through various shady dealings (that wasn't at level 1 though)
My fourth one entered Arabel and immediately made a sending, drawing in about 15 adventurers and telling them of happenings in Suzail; this got him on various watchlists and into most major metaplots; he eventually became a War Wizard.
There are lots of things you can do at level 1! Honestly, delivery quests aren't that fun, it's at higher levels where questing fun starts. Best to get through the initial pains by making other guys quest for you and entertaining them with emotes in the process.

the server caps most of off at 6/7th lvl, so get 3rd and stay there! Maybe 4th. You going to die often while playing. Been told this a hundered times, and now i see what they mean. LEVELS DON'T MATTER.

Yeah. I've noticed that once you forget the xp and levels, you'll easily get to lvl 5 or 6 (which is, IMO, the line where most classes get their coolest stuff - lvl 3 spells, shape change, pet, second attack, 3d6 sneak attack dmg, first spells…)
Disclaimer: "Easily" in this case means "You won't even notice", and it could take -long-. It's just that since you don't care about them, they'll come eventually.

Alright, do you want levels?
There is something you must know, if you want levels you -must- think in something else, or you will keep dying and respawning dying and respawning in an endless circle.
What trully works for me, roleplay your character, walk around… after you have done something like this. Choose a small goal for him.
Joining a player faction, enchanting your fullplate, get some rare item of awesome power.
Then seek it the best you can.
When you have finally archieved that you will see you will either have the levels or will know many people that can help you getting them.
Seriously, levels are very important and is very nice to have a character that can beat an ogre instead one that flees from goblins. But you will have to think in some other random goal.
To my first sucessful wizard it was to hoard gold.
To my warrior was to have all magical gear he could put his dirty hands on.
Just think in something else than xp that you will end up with friends, allies, gear and all awesome stuff.
And more important, roleplay your character, do something unusual frequently, if you are low level then start low do not be afraid I am certain many players would enjoy seeing some events for lower levels as much as they enjoy high risk explorations.

Don't get me wrong, I don't want to play to level, I just want to level to play. I enjoy the roleplaying, it's why I came on this server. It's just when the shit hits the fan, I don't want to be in the back offering nothing but words. Roleplaying is more than just talking, it's doing, and I want to do.

You've got the right idea then. Still, don't discount what you can "do" outside of combat circumstances; plotting the various pieces of a long-term goal is worthwhile and very rewarding for all involved no matter the outcome.
Even so, don't be afraid to take risks here and there. The best advice I can offer is don't go on a quest unprepared. Occasionally you'll find yourself short and that's when the reliance on friends comes into play. Still, outfit yourself before every adventure like it is your last. That gold doesn't come in very handy in the Fugue, unless you're purchasing property like Bolthor.

I always managed to make decent money from the solo quests in the Visitors Center bit.
