Immunity vs saves vs resistance
-
What is the difference between (substitute acid for any element/spell):
improve saving throw acid #
acid resistance #%
#% acid immunity
And which is the better stat to have?
-
Improving saving throws incease your chance of making a successful throw against that particular element.
For example, mestil's acid breath allows a reflex saving throw for 1/2 damage. if you have boots with +2 saves vs acid, you'll get a +2 bonus when you make that saving throw.
Damage immunity, cuts the amount of damage you take by a certain percentage. For example, if you have taken 50 acid damage, and you have an item with 50% acid immunity, you'll take only 25 damage.
However, it's important to remember, that since this is a percentage reduction, you'll always take damage unless you have 100% immunity.
Damage resistance is a fixed number, which will reduce that many points of damage. If you have elemental resist of 10/-, you will reduce exactly 10 points of elemental damage.
As an example and a comparison:-
Dragon hits you with fire breath for 200 damage.
A guy with fire resist 25/- ignores 25 damage, so he takes 175 fire damage.
A guy with 50% fire immunity ignores half of any fire damage he receives, so he takes only 100 damage.
A rogue with evasion, who had +2 vs fire boots, rolls an evasion reflex save; Thanks to the boots, he makes it, and takes no damage at all.
Which is better? It's dependent on the circumstance. For small damage numbers, resistance is better, because you take 0 damage if the amount is below the resistance threshold. For high damage numbers, immunity might be better.

What Relonor said. I'll just add that if you have Evasion, saves is probably better.
You can also have all three of these at the same time, mind you, and they all stack with themselves and each other.

I believe they overlap, but do not stack. Two items with Fire resistance 5/- does not grant you 10/- fire resist. That said, an item with fire resist 5/- and an item with acid resist 5/- overlap and take effect when warranted.
Please correct me if I'm wrong, as I probably just made an ass of myself.

My bad. Damage Immunity and save bonuses stack with themselves. Just not Damage Resistence.
-
That said, resistance stacks with damage reduction.
For instance; You have a Ring of Archers Bane, which grants you 5- piercing resistance.
Your wizard friend casts a stoneskin spell on you, which grants 10 damage reduction. The Elite orc Archer shoots an arrow, and gets a critical, for 30 damage.
The ring wil take the first 5 damage, and the reduction will take 10, meaning you only get hit with 15 damage, instead of 30.
