Writing a Book: Would like feedback

So I'm taking a long break from CoA here shortly, but I love this community and respect the hell out of all of your creative talents. I'm going to pick up a hobby I used to love, writing, and I think I'm going to buckle down and try to actually finish my first book I've written and re-written a hundred times over the past 5 or so years. I've written 5 or so chapters in each of my book ideas and am debating which one to pick up and actually commit to. Both are fantasy, one is based in another world and is told from a unique perspective, the other takes place in our world with fictional lore I based (loosely) off the realms of Heaven, Hell and Chaos described by Milton in "Paradise Lost" as they interact with Earth. I'm leaning more toward the latter as it is the one I still actually have all my notes for and was wondering if any of you wanted to be a "Test Audience" as I finish chapters. Looking more for stylistic and entertainment value feedback rather than grammar and proofreading but I won't turn down criticism on either if you decide to offer it.
Likely not counting on this seeing many book store shelves but writing is very therapeutic for me and with all the stress I'm dealing with in Real Life, its a hobby I can sit down and do at any time while I'm stressed and actually have a product to show for afterwards.

I have this problem where, I read more work from an author I like and then look back at my previously written chapters and realize I can do better… so I scrap it and start over. This has been an ongoing process for years and I'm really trying to lock it down.

Same here! The curse of the perfectionist. Rather then just going "that'll do for now" and moving on, I keep trying to make the first chapter perfect. It is a habit that's really hard to get out of. What I've been finding works recently? If you can't help yourself and want to start over, keep every single attempt you do make. Eventually you'll end up with ten drafts of the same idea and you can mix and match to make it the best it can be.

are you stream of thought writer, or do you make notes and outlines and sort of plan things out and stuff? I know there are definitely a few other writers around here…
